THIS IS SOOOOOOOOO QUICK! – It is mind blowing

Not only is it quick, its very healthy and is defiantly one of my favorite breads EVER!

I vary this recipe with whatever is stocked in my cupboards, sometimes adding different nuts, such as pecans or Brazilian nuts. Or changing the dried fruits, adding more dried (un-sulfured) apricots or prunes. All this I will remind you below in the ingredient section.

I’am, with out a doubt, a real sweet tooth! Not only is this gorgeously sweet from all its natural organic dried fruits,it is perfectly savory with all the crunchy nutty flavors.

If you are optimistic about what i’m trying to express, think of sweet’n’salty popcorn or baklava or a nut cake…something like that.

What i’am trying to say is that it just works! And YOU MUST TRY 🙂

*** REMEMBER you can swap certain nuts and fruit depending on your preference or whats in your cupboard***

Please don’t be scared away with the quantity of ingredients- its all goodness and will be worth while!

makes 1 large loaf

What you will need:

  • 450ml buttermilk or soya yogurt – Vegan option
  • 100ml agave syrup (you could use black treacle)
  • 80g dried organic apricots and/or figs
  • 40g hazelnuts
  • 25g almonds
  • 70g raisins (you could try cranberries)
  • 85g rye grits
  • 40g organic rolled oats
  • 165g wholemeal rye flour
  • 180g plain flour (I usually use glutenfree flour)
  • 65g crushed/ground flaxseeds/linseeds
  • 50g sunflower seeds
  • 15g chia seeds
  • 1/2 tsp aniseeds
  • 1/2 tsp caraway seeds
  • 1/2 tsp coriander seeds
  • 1/2 tsp fennel seeds
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp bicarbonate soda
  • 1 tsp salt
  • (optional) rolled oats to top

What to do:

Preheat the oven to 200°C/gas mark 6.

Firstly, chop all the fruit and nuts roughly/coarsely.

Mix together the soya yogurt/buttermilk and the syrup in a bowl.  In a (very) large separate bowl add all the dry ingredients (such as the flour, seeds, powders). Add in your chopped nuts and fruit before stirring in the yogurt/buttermilk mix.

Line a loaf tin with grease proof paper so that there is excess paper overlapping the ends and sides. Then, pour the mixture into the tin and sprinkle with some extra oats. Bake for about 45 minutes in the centre of your oven.

ENJOY! – perfect with a nut butter, banana, set honey, etc.
